Villa Cilnia's Supertuscan is produced with the Sangiovese and Cabernet-Sauvignon grapes from the "La Tonda" vineyard. Its colour is an intense ruby red one, with burgundy undertones: it has a rich and fruity bouquet with spices and tobacco undertones. Its taste is persistent and full-bodied, rich and refined, ripe-fruit like and velvety. It goes well with game and red meat.
The grapes are harvested by hand between the end of September and the beginning of October. Sangiovese's and Cabernet's fermentation takes place into different steel containers where the temperature is severely controlled for 12 - 18 days, with daily wine pressings. Both of the wines are then carried into steel tanks where the malolactic fermentation continues until January. The two wines are aged and kept 12-18 months into barriques of French oak of 225-500 litres (approx. 50 - 111 gal.), and successively blended and bottled. Their refinement continues into bottles for 6-8 months. Acidity 5.5. Alcool 13 % vol.
