Villa
Cilnia's white wine is produced with the Chardonnay and Sauvignon Blanc
grapes from the "Dei Gelsomini" and "Dei Lauri" vineyards.
Its colour is a straw-yellow one, it has an intense and fruity bouquet,
with undertones of ripe apples, crust of bread and with warm vanilla nuances.
Its taste is a rich one, full-bodied and dry, with persistent and lasting
aftertaste. It goes well with white and spiced meat, mushrooms, truffles,
smoked trout, salmon and very ripe cheese.
After a soft grapes
pressing - harvested by hand at the end of August - the wines are separately
kept into in steel containers for 18-24 hours: the temperature is also
severely controlled. The wines are then carried into barriques of French
oak of 225 litres (approx. 50 gal.), the fermentation begins and continues
there for 3-4 months. Then, both of them will be aged for 5-6 months into
other barriques of French oak of 225 litres (approx. 50 gal.) and only
after this period it is possible to blend and bottle the two wines. Mecenate
is still further refined into bottles for 6-8 months. Acidity 4.5. Alcool
