This wine is produced with the Sangiovese grapes in the Del Quercione vineyard: its colour is a bright ruby kind of red with purplish glares. Its bouquet is an intense one, ripe cherry-like, violet and iris-like. Its taste is a full-bodied one and intensely fruity, with a light fragrance of wood. It has a silky body with a persistent aroma. It goes well with roasted and grilled beef, mushrooms and cheese.
The grapes are harvested by hand between the end of September and the beginning of October. The fermentation takes place in steel containers, the temperature is severely controlled for 15 - 18 days, with daily wine pressings. The wine is then carried into steel tanks where the malolactic fermentation continues until January. Aged and kept 6-8 months in barriques of French oak of 225-500 litres (approx. 50 - 111 gal.), its refinement continues, now in the bottles, for 6-8 months. Acidity 5. Alcool 13 % vol.
